Eating well is just so much more approachable and enjoyable that way.
Today we’re saying YES to burgers. YES because they’re simple, quick and a family favourite.
Since this recipe is going to be Sunday’s Meal Prep Challenge feature, we’re going to be baking them in the oven, to make multitasking easy in the kitchen. However, if you want to grill these up, by all means go ahead.
Also, we’re pumping these lean patties with spinach, for great flavour and extra juiciness.
These high-protein, veggie-loaded burgers come together quickly for your weekend meal prep or for a speedy weeknight supper.
You’ll gobble these spinach turkey burgers right up. (Cheesy pun very much intended.)

Spinach Turkey Burgers
Serves: 4
Ingredients
1 pound ground turkey
10oz (283 gr) box of frozen spinach, drained
1 garlic clove, minced or pressed
1 shallot, finely diced
1/4 cup parsley, chopped
3/4 teaspoon sea salt
Freshly cracker black pepper
Method
1.Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
2.In a large bowl, mix turkey, spinach, garlic, shallot, parsley and salt and pepper until combined, being careful not to over-mix.
3.Form the mixture into patties and place on the baking sheet.
4.Bake 15 minutes. Serve immediately or store in an airtight container in the refrigerator up to 4 days or freeze up to 3 months.
