8 Whole grain English muffins or 8 large leaves of Boston lettuce
1 apple, sliced in 8 thin rounds
8 slices strong cheddar
Instructions
In a small saucepan, place the olive oil and saute the shallots on medium heat until translucent. Let cool.
In a large bowl, place the shallots and the rest of the ingredients “For the burgers”. Mix until just combined.
Form into 8 patties and reserve on a plate in the fridge until ready to cook.
In a small bowl, combine all the ingredients For the chipotle yogurt and reserve.
Preheat the grill to high. Grill until properly cooked through, 13-15 minutes, flipping half-way through. During the last minute of cooking, add 1 slice of cheddar on the burger and cover the grill pan to let the cheese melt.
Serve over English muffin or in lettuce cups with 1 slice of apple, lettuce and a dollop of chipotle yogurt. Serve with a side of sweet potato wedges.
Notes
You may skip the step of sautéing the shallots and add them in raw to save on time, however I like mellowing them out by sautéing them slightly. Both delicious!
You may also bake them in a 425 degree Fahrenheit oven for 20-22 minutes, until cooked through.
If you are going to eat them at a later date, individually wrap the patties and freeze them. Defrost them in the fridge the night before you plan on cooking them.
