Endive salad with lemon, parsley & pomegranate

January 13, 2012 | byVanessa Perrone

In the dead of winter, it’s great to find comfort in warm soups and stews. But sometimes, I feel that a fresh and zesty salad helps to bring a little brightness to the table and reminds me of summer time.  I’m a big fan of endive and it’s great prepared simply with olive oil, lemon and parsley. But since I had pomegranate on hand, I added them in for some extra sweetness. Enjoy!

Do you like endive? Are there any winter-y foods that transport you to summer time?
