Our Grocery Routine
On Sundays, after a leisurely morning of breakfast, reading and family time, my husband and I head out for our weekly grocery run. We’ve built it into our routine and especially look forward to it in the summer, since this is usually synonymous with outdoor markets. After a couple of hours of scanning the stalls, filling-up our reusable bags and geeking-out on the foodie finds that will make up our meals and nourish our bodies for the week, we head home, arriving just in time for lunch. The timing of which has prompted another weekend routine: the quick-and-easy-post-grocery lunch.
Does anything work up an appetite like food shopping does? I don’t know about you, but by the time we get home, we need a meal that will come together fast and that will hit the spot. Normally I would recommend having something ready in the fridge, but given that this always falls on grocery day when our cupboards are empty, the meal needs to come together with whatever we’ve just purchased.
Over time, I’ve accumulated a few favourite recipes that meet the feed-me-fast criteria, and become a pro at it too. Some I owe in part to my husband who would race me to see if I could prep lunch by the time he put the groceries away…
Nordic shrimp, radish & avocado Swiss chard wraps
The Swiss chard wraps have become one of those go-to, quick and simple weekend recipes. Nordic shrimp, now a staple on our shopping list, are small, wild shrimp, loaded with protein, healthy fats, that come pre-cooked and ready to eat and have the added advantage of being sustainably caught right here in Quebec. A choice you can feel good about, all around. Swiss chard, besides being immensely dense in vitamins K, A and C, come with beautiful, large, dark green leaves, that are tender, pliable and ideal for wrapping. If you’ve never used Swiss chard in this way before, I definitely recommend it, but you can feel free to use other leafy greens instead: collard greens, romaine or Boston lettuce would work very well.
- 1 tablespoon extra virgin olive oil
- 1 medium onion, diced
- 1 cup frozen corn
- 1 pound cooked nordic shrimp
- 10 radishes, thinly sliced
- 2 avocados, diced
- 1 jalapeno pepper, micned
- 2 limes, juiced
- 1/2 teaspoon sea salt
- 1/2 cup fresh cilantro
- 8 Swiss chard leaves, stems removed
- In a saute pan, heat the oil over medium heat and saute the onion and corn, 4-5 minutes. Remove from the heat a let cool slightly.
- In a large bowl, combine the cooked onion and corn with the shrimp, radish, avocado, jalapeno, lime juice, salt, pepper, cilantro and toss.
- Wrap in Swiss chard leaves to serve.
- This salad keeps up to 3 days in an airtight container in the refrigerator.
