Sesame Beef Lettuce Cups

For the dipping sauce
  1. 3 tablespoons honey
  2. 2 tablespoon tamari
  3. 2 tablespoon rice wine vinegar
  4. 1 teaspoon toasted sesame oil
  5. 1/2 teaspoon chili flakes
  6. 2 spring onions, sliced
For the lettuce cups
  1. 1 tablespoon avocado oil
  2. 1 large onion, diced
  3. 2 cloves garlic, minced
  4. 2-inch piece ginger, minced
  5. 1/2 teaspoon chili flakes
  6. 1 pound lean ground beef
  7. 1 tablespoon tamari
  8. 2 teaspoons fish sauce
  9. 1 cup shredded carrot (approximately 2 carrots)
  10. 1/2 cup fresh cilantro, chopped
  11. 2 tablespoons toasted sesame seeds
  12. 1 head boston lettuce, leaves washed, dried and separated
Instructions
  1. In a small bowl, combine all the ingredients for the dipping sauce and set aside.
  2. Heat the avocado oil in a large saute pan over medium heat and add the onion, garlic, ginger and chili flakes. Saute 2 minutes until fragrant.
  3. Add the beef and, using a wooden spoon, begin breaking it into small pieces. Add the tamari and fish sauce and saute until the beef is cooked, about 7 minutes.
  4. Add the shredded carrot, cilantro, sesame seeds, toss and remove from the heat.
  5. Serve the beef in the boston lettuce cups with a drizzle of the dipping sauce.
